Yummy stuffed peppers

Yep, back into "thrive" mode. Been reading and listening about nutritional info again and it has me all pumped up. 
Roasted some Brussels sprouts and cauliflower with a little olive oil, salt, pepper and balsamic vinegar.
 Stuffed peppers!
 Stuffed these guys with brown rice, rye berries, red kidney beans, mushrooms, onions, little Braggs, nutritional yeast and topped with crushed tomato.
I made sure to portion out lunches for tomorrow before leaving the kitchen to eat, otherwise there would not have been any leftovers!  I could munch on these until I blew up. Sometimes it's hard to watch your portions.  :)
